
Peanut Butter Cookie - right before I ate it!
I’m not much of a cook. As a matter of fact, Mr. LH does ALL of the cooking around here. I’ll occasionally heat up a meal or boil water for oatmeal, but other than that, I’m quite useless in the kitchen. However, with the cooler weather I was craving peanut butter cookies. I subtly mentioned this to Mr. LH and he offered to make them for me. We have a running “joke” of sorts around here; I say, “Peanut butter cookies sound good.” And he hears, “Make me some peanut butter cookies.” Of course, I’m not a demanding b!t@h, but I guess there is some manipulation going on from my end.
The beauty of peanut butter cookies is that the ingredients are so simple; egg, brown sugar, peanut butter, flour, baking powder, baking soda. We halved the recipe since we really didn’t think we could eat 3 dozen cookies. Then we saved half the mixture since 7 cookies were plenty for two people (if 14 large cookies were lying around, they’d be eaten. But 7 cookies seems harmless.) Notice I actually know how to make cookies as I frequently offer my help in the kitchen, usually in the form of stirring or cleaning up as we go. It’s just that Mr. LH feels that I’m slightly inadequate in the cooking department and something will go wrong.
Thirty minutes later, golden brown, cooled yet still warm cookies are ready to be eaten. How I love the simple pleasures in life.

yummm. Now I want a peanut butter cookie! I read that if you leave the dough in the fridge overnight, the cookies will be much better. Maybe that’s only for chocolate chips though…

@Retire by 40 – That’s good, I have half the dough sitting in the fridge now. Of course, I still haven’t eaten all my cookies yet but they’ll be gone soon.
@eemusings – Peanut butter cups sound yummy too. My cookies (or Mr. LH’s cookies.
) came out pretty good. They were sort of large, but I think it’s that we underestimated how much dough expands in the oven.
@Krantcents – That sounds good on a cold day. I especially like soup in those large bread rolls that are cut out and the soup is poured into. YUM!
It looks like a simple recipe yet many fail to perform it perfectly. I think its on the way you bake it that matters.

You know, I need to make peanut butter cookies more often. I only make them at Christmas with the hershey kiss sitting in the middle.
My favorite comfort food is homemade pea soup and some homemade bread.

Peanut butter cookies are my all-time favorite but I have a weakness for most sweets. If they’re in the house, it doesn’t take me long to make them disappear.

I love peanut butter cookies, and I just made some last week. My husband wasn’t home, so I ate them all in a little over a week (ugh!). I wish I could have halved the recipe but it called for one egg. Anywho, a dozen cookies in my belly later, and I think I might have to make more in a few weeks. Nest time, I’ll freeze most of them
